I made this cake for Gela's Mom's 60th birthday. Her Mom is diabetic so she asked if I could make the cake with Splenda instead of sugar. I had never made a cake with Splenda, so I tested the recipe at home and according to my taste-testers (my sisters) they couldn't even tell the difference and said it tasted great! Whew! The purse on top was especially made for her Mom with splenda and it was chocolate cake with fresh strawberries and cream. The gift part of the cake, the bottom, was made with regular sugar for the guests. According to Gela, the cake was a hit with her Mom and I was happy that I was able to make her the cake she wanted and also was able to accomodate her special diet!
