I completely forgot about this cake I made for my coworker's birthday...it's my most requested coconut cream cake. It's vanilla chiffon cake with coconut flavored filling. I toasted coconut flakes and then spread it around the sides and top of the cake. I have to admit that it's one of my personal favorites :)

Toasted Coconut Cake
